Cutlets are made from meat stuffing and, as a rule, have oval form. To many of us this fact is known from as early as school years, or even from the nursery school. In actual fact the acquaintance of man with this dish took place in the moment when a whole piece of meat, cut together with a costal stone, had been sent on a frying pan. This was how the first chop was prepared. A modern chop or cutlet is, in the first place, a dish of chopped or ground meat or fish. The name of this or that item specifies its basic constituents. For example, Chiken Cutlets, Beef Cutlets, Fish Cutlets, Prune Cutlets or Cheese Cutlets. There are items with a secret. Say, a piece of butter is necessarily placed inside the Specialty Cutlets, and some buckwheat is added to the "Special". "Home-made" cutlets also have their distinct feature: they, indeed, taste like home-cooked.
