Chops appeared on our tables thanks to the French cuisine. Frankly speaking, it’s far not the only dish we ought to be obliged to it for. Such common to us words as "omelet", “clear soup", "mayonnaise", "cutlet", are the natives of the French language. A chop is no exception, although it has changed a lot since the XVIII century. In the past a chop was a round cutlet of undercut and without a bone. Today it is a chopped cutlet of round form made of beef, pork or chicken.
If you follow the French traditions, chops can be boldly served without garnish. Bread is the only partner allowed. And a pungent sauce will help to add piquancy to the dish. What remains is only to choose which, as the French cuisine offers over three thousand sauces. |
